1 ¼ cup all purpose flour
1 tsp baking soda
1 cup oleo (soft)
¾ cup firmly packed brown sugar
¼ cup regular white sugar
1 small box instant vanilla pudding mix
2 eggs
3 ½ cup quick cooking oats
1 cup raisins (optional)
¾ to 1 cup chopped pecans (optional)
Combine oleo, sugars and pudding mix together in large bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour and baking soda mixture. Stir in oats, raisins and nuts. Batter is stiff. Drop by teaspoons about 2” apart onto a cookie sheet, lightly sprayed with Pam or coated with butter or cooking oil. Bake at 375 degrees for 10-12 min. Makes about 5 dozen.
