3 lb. boneless chicken breast
1 large onion
1 ½ cup grated cheese
1 can mushroom soup
1 can Rotel tomatoes
1 can tomato soup (maybe just use ½ can)
16 oz. pkg of Doritos (optional)
Place raw chicken breast in large baking dish, as this is quite soupy. For this amount I use a 9 x 13” cake pan. Of course you can trim this down to ever how much chicken you need. I mix all the other ingredients together and pour over chicken. Cover with foil. Cook on low heat until very tender. Much better to cook real slow. When done take out of oven and cover with Doritos and top with cheese, return to oven long enough to melt cheese. Wally, Kathy, Eric, Natalie, Nicole, Leland and I enjoy this a lot. This dish is one of the popular things that I fix almost every time they eat with us. I think you will enjoy it, too! If you’re cutting corners or fat I sometimes leave off the cheese and Doritos. You can also add more spices to the mixture for a little more Mexican flare if you wish. Be sure to cover this with foil as you bake! This can also be done with chicken that has been cooked and de-boned. Using raw chicken was my idea to save time!
