Fresh Apple Cake




2 cups flour

2 cups sugar

1 cup cooking oil

3 tbs milk - 2 tsp vanilla

1 scant tsp salt

1 tsp baking powder

2 scant tsp soda

2 eggs (beaten)

1 cup nuts, cut fine

4 extra ripe apples peeled and cut fine


Put all ingredients in mixing bowl at one time. Mix really well with wooden spoon. Use regular cake pan, size 9x13, grease with shortening and dust with flower. Bake at 350 degrees for 45-50 minutes. This is very good plain, or can be served with Cool Whip. I used to freeze fresh apples when they were in season to make these cakes with. I thought they were even better. I was always looking for ways to be thrifty.
