Fresh “Fried” Sweet Potatoes - Candied




Sweet potatoes

Butter or oleo

Sugar

Cinnamon

Maybe a dash of salt


Peel sweet potatoes, wash and cut ⅛” thick, put in fry pan with oleo. Add sugar, maybe ½ cup, sprinkle with cinnamon. Cook on medium to low heat until tender. May need to adjust sugar to more or less, as you can tell I don’t measure, but it does take a lot as they are supposed to candy and form a caramel-like substance. Cook covered and turn often. You may like brown sugar more than white, either is real good. One of my favorite foods!
