2 medium yellow squash
1 medium onion - chopped
Salt
Black pepper
Corn meal
Cooking oil
Wash yellow squash and dry with paper tower. Slice about ⅛” thick, salt and pepper to taste, add corn meal as much as squash will absorb. Put small amount of oil in large fry pan, when hot add enough squash to cover bottom of pan. Cook fast and continue to turn with spatula. When about half done, add onion to taste. Brown to light golden. Put on paper towel to absorb excess oil. Then repeat process. It’s important to use only enough oil to fry good, cook fast and turn often to brown evenly.
