Leftover mashed potatoes
Boiled eggs, 2 or 3
1 small to medium onion
Prepared mustard
Mayonnaise
Sweet pickles
Heat mashed potatoes, if too thick add small amount of milk. Add chopped boiled eggs, chopped onions and pickles, add enough mustard for color and tart taste. Mayonnaise to taste, maybe 2-3 tbs.
In over 70 years of marriage I’ve had to learn to be thrifty, and this is one of my thrifty recipes. We do like it very much, an excellent way to use leftovers. Sorry I can’t be more specific on the amounts of ingredients, but I’ve pitched them in all these years and never stopped to measure. Dad never complains!!
