Icebox Cookies

Updated: May 23, 2022

2 ½ cups sugar

2 tsp Karo syrup (or any white syrup)

1 tsp vanilla

3 eggs - beaten

1 lb oleo (melted)

5 cups flour

1 tsp soda

This is a basic dough for sugar cookies, you can add any variations you like. I enjoy putting nuts and raisins in, I use ½ cup of each. You could omit the raisins and use nuts and use nuts and chocolate chips, etc. This is an old recipe, I don’t remember I just have gotten it in Owensboro, Ky. I’m sure you’ll remember eating them sometime. I used to make them often, until I misplaced the recipe for several years. I would make them, chill the dough, then roll the dough into rolls and wrap in wax paper, freeze and slice. Bake as needed.

Good to have on hands. We were having these cookies with coffee one Sunday night after church, when we lived in the parsonage on N. Main in Poplar Bluff, Mo. We had invited some people over. I believe it was the Claytons (Howard and Juanita), Harold and Wanda Jackson, I don’t remember who else. We were really enjoying our coffee and cookies until Greg’s and Wally’s dog (Baron von Schultz) came in and “pooped” a big pile in front of everyone. He was also the dog that cocked his leg on the corner of my bed spread every time he passed by. When I got the broom after him, he ran under the bed and growled at me. Greg and Wally thought it was very funny.
