Marinated Garden Salad





1 15-oz small green peas - drained

1 15-oz french style green beans - drained

1 15-oz white small kernel corn - drained

1 4-oz jar chopped pimento - drained

1 medium onion - chopped

¾ cup chopped celery

¾ to 1 cup chopped green pepper


For Marinate:

1 cup sugar

⅔ cup vinegar (white or apple cider)

1 tsp salt (scant)

½ cup oil - maybe a little less


Boil this mixture for 2-3 min, cool completely and pour over combined vegetables. Can add ½ tsp black pepper if desired. Best to refrigerate overnight, will keep for a week or longer in fridge. This is a large recipe, could be trimmed down. Good to make ahead when schedule is tight.
