Peel, clean and wash as many as you nned for servings. Slice about 1/4-1/2" thick (French fry style). Salt and pepper to taste. You can use regular salt or seasoned salt. You can omit the black pepper and onion, but all of this is great on them. Have oil hot and cook covered on medium heat until tender and turning brown. You need to turn these while cooking to help the browning process and doneness. You can cook quite a large amount at one time, will brown more with fewer potatoes, of course. Cook until soft.
