3 egg whites
1 cup chopped nuts
4 oz Cool Whip (thawed)
20 soda crackers or 30 Ritz crackers
1 cup sugar
1 tsp vanilla
Grated coconut
Beat egg whites with mixer until they form a peak. Gradually add sugar and continue to beat until well mixed. Stir in (don’t beat) nuts and crackers that have been coarsely broken. Put in pie pan that’s greased with butter or sprayed with Pam (vegetable oil spray) and bake at 325 degrees for 20 minutes. Cool completely. Top with Cool Whip and sprinkle good with coconut. Put in fridge, this keeps well for 2-3 days at least. Makes 1 9-inch pie, easy to double. An 8-oz carton of Cool Whip is perfect for 2 pies. This came from Eden Isle in Heber Springs, Ark.
