Add chicken to pan, cover with just enough water to barely top the chicken. Cover and cook on low heat until tender, add salt to taste and pepper if desired. If bone is in, let cool, take bone out. Put broth in fridge until it cools – even overnight. Then you can lift the fat off and now you have “de-fat” broth that’s good for noodles, pasta, chicken stuffing and many other recipes. The chicken is good to eat this way or chicken salad, dumplings, casseroles and many other “chick” ideas! Chicken is my favorite meat, I love all versions.
