Wash fresh sweet potatoes, dry and rub with cooking oil. Place on baking sheet uncovered. Bake in oven on low heat, maybe 300-350 degrees, until real soft. Leave in skin, cut open lengthwise and serve hot with butter. Potatoes are much better if they’ve been on hand long enough to be completely dried out. This was a common meal for Leland and me as we grew up on the farm in Arkansas. Our mothers never had fancy foods to cook, so this tasted good after a long day of chopping or picking cotton. We still like them.
