3 cups all purpose flour
2 cups sugar
1 tbsp cinnamon
1 tsp salt
1 tsp baking soda
¼ tsp baking powder
1 tsp vanilla
3 eggs
1 cup vegetable oil
2 cups shredded zucchini
1 ½ cups nuts
Raisins if desired
Preheat oven to 325 degrees. Mix flour, sugar, cinnamon, salt, soda, and making powder in large bowl. In a small bowl, whisk eggs, oil and vanilla. Add to dry ingredients, mix well. Stir in zucchini, nuts and raisins (raisins should be dusted with flour before stirring in). Pour into well-greased loaf pans. Bake for 1 hr to 1 hr 15 min, or until a toothpick stuck in the middle comes out clean.
